Coconut Ginger Carrot Soup

This is such a warming and nurturing soup that is also cleansing. It has a healthy dose of fresh ginger which is a powerful detoxifier due to its capacity to stimulate the body’s digestive and metabolic fire. The turmeric is cleansing as well, due to the powerful phytonutrient component curcumin which stimulates production of bile by the gallbladder. The liver uses bile to eliminate toxins. The warming spices also help to fire up metabolism and digestion. The carrots and spices are warming and grounding in nature. Packed with plenty of fiber and flavor, this hearty pureed soup will leave you feeling satisfied.  Serves 6.

•1 Tbsp coconut oil
•1 medium yellow onion, diced
•4 cloves of garlic, finely chopped
•3 Tbsp fresh ginger, finely chopped
•1/2 tsp ground cumin
•1/2 tsp ground coriander
•1/2 tsp turmeric powder
•1/8 tsp ground cinnamon
•1/8 tsp ground cardamom
•dash of ground cloves
•5 cups peeled and chopped carrots (approx. 8 carrots)
•4 cups of vegetable broth
•1 cup coconut milk
•1 tsp course grey sea salt
•1/2 tsp pepper

optional garnish
•1/4 cup pine nuts, toasted
•1/4 cup fresh cilantro

In a large saucepan, sauté the onion and garlic in coconut oil until translucent, about 3-4 minutes on medium-high heat. Add the carrots and the ginger and cook for another 2 minutes, stirring often. Stir in the spices and continue cooking for a few more minutes. Pour in the vegetable broth and the coconut milk and bring to a slow simmer. Allow soup to continue simmering, uncovered, for 25-30 minutes or until the carrots are soft. Remove from heat and blend well with an immersion blender or upright blender until smooth.
Garnish with cilantro leaves and pine nuts toasted on the stove top. I toast mine in ghee or butter, but you can dry toast also.
